Sweet Potato Banana Pancakes

This really is one of the best pancakes I've had in a LONG time. The original recipe I got HERE called for some over-night prep work, but ain't no body got time for that, so my modified version calls for NO prep work whatsoever. You're welcome.

** No flour
** No sugar
** No egg

Experimenting with pancakes is so much fun! Try a new ingredient in your next batch and see how they come out. Learning to play around with recipes will lead you to some fantastic creations.



  • 1/3 cup rolled oats
  • 1/2 large sweet potato, heated and peeled
  • 1 ripe banana
  • 2 tbps plain greek yogurt
  • 2 tbsp almond milk
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking soda


  • Throw all ingredients, except the baking soda, into a food processor. Mix until pancake-like batter
  • Fold in the baking soda by hand
  • Over medium heat skillet, spoon out 3-4 pancakes. Let them heat for 2-3 minutes, flip, and serve

Top with whatever add-ons you want and some light syrup if desired.
