This morning I bring to you Banana Bread Protein Pancakes. They taste just like Banana Bread, but have no flour, no sugar, and no eggs.
I got the original recipe HERE from Peanut Butter Fingers but changed it up just a bit =). Enjoy!
I just started training for a marathon so I am on a big banana kick right now. Bananas = no cramps.
Nutrition 101: BANANAS - These are full of potassium which is an electrolyte that will help keep your muscles from cramping or from having muscle spams. Other potassium rich foods include avocado, oranges, potatoes, spinach, and tomatoes.
BANANA BREAD PROTEIN PANCAKES
- 1/2 cup rolled oats
- 1 banana, mashed
- 1/4 cup plain greek yogurt
- 1/2 teaspoon cinnamon
- Place all ingredients into a blender or food processor and blend until the batter is pancake-like texture.
- Over a medium heat skillet, scoop out batter into desired size pancakes. Let cook through for 2-3 minutes and then flip.
- Top with almonds, pumpkin spice, maple syrup, sliced bananas, or whatever else you like!
